From hatchery to harvest, our oysters are carefully cultivated through a precise, hands-on process. Each step ensures they grow to perfection before reaching your plate, fresh and full of flavor.
Hatchery
The process starts in the hatchery where we retrieve larvae from our select broodstock. We then place finely ground oyster shells with the larvae where it connects and becomes seed.
Nursery
The seed remains in the nursery, which is a land dwelling system that allows our seed to grow with proper nutrients and protection from predators.
Farm
When the seed reaches 2mm they are placed in baskets out in the farm. We use an Australian based, long line system where our oysters are conditioned to be periodically in and out of the water to help strengthen and grow the muscle inside the shell.
Grading & Tumbling
As the oysters grow they need to be tumbled and graded. The tumbling helps create that perfect deep cup shell and the oyster to grow to its full potential. After the oysters tumble they are then graded and placed in baskets with larger holes to allow more water and nutrients to flow through
Harvesting
When the oyster reaches full size (2 1/2”- 2 3/4”), and orders are placed, a cooler truck is backed up to the pier and oysters are harvested and placed on the truck within 20 minutes.
Processing
Oysters are then taken to a refrigerated processing center where they are washed, counted, and packaged.
Shipping & Delivery
Our oysters are either placed on refrigerated trucks to go to your favorite restaurant, picked up by FedEx to be shipped to your door, or taken to our storefront for pickup!
